Brinkworth Blue is delicious creamy firm Wiltshire blue cheese named after the village and cows, which make up the oldest pedigree Friesian herd in the country. During the cheese making process, it ripens for 2 months, is turned every week and pierced in the first 2 weeks of its life.

Similar to a stilton in that it is a hard blue, Brinkworth Dairy makes 60kg of Brinkworth Blue per week. It’s creamy, sweet and nutty, with a chestnut honey flavour and fairly thick earthy brown mushroomy crust. A close textured cheese, golden and milk white with blue and green veining the texture, the aroma of new mown grass or hay can be appreciated.

Brinkworth Blue is well complimented by a beautiful tawny Port. The rich soft flavours bring out the best in the crumbly blue cheese. A finely sliced pear and a thin, salty cracker to layer with Brinkworth Blue is strongly recommended, as is the addition of a smidge of fruity chutney.
