A soft and fresh and smooth curd cheese that is only ripened for three days, then the outside is rolled in a garlic and pepper seasoning. Although this might be a young cheese with very little maturing in the process there is still a lot going on!

This cheese, annoyingly moreish has a little bit of Brinkworth Dairy history being the first of cheesemaker Ceri’s creations. Delicate, fresh and light. Lemony with a hint of acidity. Milky, silky and soft. Pick out the dill and coriander flavours with back notes of red pepper and paprika – don’t forget the garlic.

Recommend pairings start with a crisp Sauvignon Blanc or a delicate French Rose, but nothing that will overpower the subtle cheese flavours. Crisp clean flavours of fresh vegetables and fruits, crunchy salad leaves, fresh bread, figs and a light Parma Ham all go well with this versatile yet indulgent little cheese.
