Royal Wootton Bassett Blue

Royal Wootton Bassett Blue

£6.10

Named after the local town of Royal Wootton Bassett just a few miles from Brinkworth Dairy, this is a stunning soft blue cheese. Said to be a labour of love it takes three weeks to develop needing constant attention.

Small and perfectly formed, once you slice through the rough, mushroomy rind you discover the buttery interior delicately veined with blues and greens. Take a slice you’ll keep going back for more. Certainly not a crumbly Stilton-like blue, it is more akin to a creamy, smooth Dolcelatte or Gorgonzola. Fresh tasting and indulgent at the same time you should look out for hummus and celery aromas. Enough strength of flavour to delight without being overpowering, it deserves every award it has won.

The cheese can tolerate deep flavour pairings that cut through the buttery creamy taste.  It goes well with the Shiraz, a huge Barolo, finely sliced cured meats, pate or salamis and of course honey!
